Ingredients

  • 1 cup of chopped watermelon
  • Juice of ½ a lemon
  • 1 tbsp pure maple syrup
  • Sparkling water
  • Ice
  • Lemon slice - to garnish

How to make

  1. Add the ingredients (other than the sparkling water) to a blender and blitz well
  2. Pour into a tall glass and top up with sparkling water and stir
  3. Serve immediately, garnished with a slice of lemon

The Dark and Stormy cocktail is simple, with only three ingredients, but getting the right measures of each is crucial.

A popular cocktail using dark rum, which is key to the Dark and Stormy’s rich flavour and deep colour. Using ginger beer (not ginger ale) gives the cocktail its intense ginger flavour; you want it to be brewed and fermented but non-alcoholic.

Make sure the lime juice is freshly squeezed - avoid bottled lime juice as they often have added preservatives and other chemicals and lack the freshness of squeezed juice.

The Rob Roy is a cocktail created in New York City in 1894 by a bartender at the Waldorf Astoria in Manhattan. The drink was named in honour of the premiere of Rob Roy, an operetta by Reginald De Koven. Made with Scotch Whisky the Rob Roy can be made sweet, dry, or perfect. The standard Rob Roy is the sweet version, made with sweet vermouth, ‘dry’ is made with dry vermouth and a ‘perfect’ is made with equal parts sweet and dry vermouth.
