Kiwi Bellini cocktail

This exquisite green cocktail is a twist on a classic Bellini, using kiwi and lime in place of the traditional peach purée.

Ingredients

  • 1 fresh kiwi
  • 55ml vodka
  • Juice of ½ lime
  • 15ml sugar syrup
  • Prosecco
  • Kiwi slice - to garnish
  • Ice

How to make

  1. Cut the kiwi in half and scoop out the flesh and place in the bottom of an ice filled shaker and muddle
  2. Add the vodka, lime juice and sugar syrup and shake
  3. Strain into a chilled decorative glass and top up with Prosecco
  4. Garnish with a slice of kiwi
