Ginger Fizz cocktail

Inspired by the Gin Fizz, the Ginger Fizz is peppery and refreshing on a warm summer’s evening. Unlike a lot of cocktails, this one isn’t too sweet and sickly.

Ingredients

  • 3 thin slices of fresh ginger
  • 50ml dry gin
  • 2 teaspoons of caster sugar
  • 2 squeezes of fresh lemon juice
  • Ginger ale
  • Ice
  • Lemon wedge to garnish

How to make

  1. Bruise the sliced ginger to release the flavour and place in the bottom of a tall glass
  2. Add the gin and sugar and mix together with the ginger
  3. Add some ice, the lemon juice and top up with ginger ale
  4. Garnish with a wedge of lemon

A popular cocktail using dark rum, which is key to the Dark and Stormy’s rich flavour and deep colour. Using ginger beer (not ginger ale) gives the cocktail its intense ginger flavour; you want it to be brewed and fermented but non-alcoholic.

Make sure the lime juice is freshly squeezed - avoid bottled lime juice as they often have added preservatives and other chemicals and lack the freshness of squeezed juice.
